Waffles de Yaz

Makes:  8-10 small waffle squares (~2-3 big waffle squares)

Preparation time: 35 mins plus 1 hour cooling

Cooking time: ~3 mins per batch

Ingredients:

  • 3 3/4 tsp (0.5 oz/15 g) sugar
  • 1/4 tsp (1g) salt
  • 2 cups (9 oz/250 g) flour
  • 1 1/2 cups plus 3 tbsp (400 mL/13.5 oz) whole milk
  • 1/3 cup (2.75 oz/75 g) butter, melted
  • 1/8 tsp (1 mL) vanilla extract
  • Scant 1/2 cup (3 oz./90 g) egg whites (about 3 whites)
  • Confectioners’ sugar for dusting

Description

  1. Whisk the sugar, salt, flour, milk, and butter together in a mixing bowl.
  2. Stir in the vanilla extract and then chill the batter for 1 hour before using.
  3. In another bowl, whisk the egg whites until they hold soft peaks.
  4. Using a spatula, lightly fold the egg whites into the batter until evenly combined.
  5. Heat the waffle maker to 430F (220C). Spoon a ladleful of batter into each side, close the lid, and cook for about 3 minutes, until golden.
  6. Carefully remove the waffles and cook the rest of the batter in the same way.
  7. Dust the waffles with confectioners’ sugar and serve immediately with fresh fruits and almond butter. Enjoy!
