Sofrito de Yaz (sin ajicitos)

Makes: 4-6 Cups

INGREDIENTS:

  • 3 large green bell peppers, stemmed, seeded, and cubed
  • 3 large Spanish yellow onions, cubed
  • 2 bags of aji dulce (~10 peppers) OR 1 red bell pepper
  • 1 head of garlic, peeled
  • 1 large bunch of cilantro
  • 1/2 bunch of recao/culantro (~15 leaves) OR 1 large bunch of cilantro

Description

  1. Combine all the ingredients in a food processor or blender and pulse to form a textured purée. When ready to use, sauté the sofrito in olive oil and proceed with the recipe as directed.
